INFINITY IMPERIAL STOUT | 11% IMPERIAL STOUT | Pomona X Azvex

A massive ambitious stout brewed with Azvex for our birthday. A wort made up of pale malts and oats was boiled for 24 hours to concentrate sugars and achieve as much caramelisation as possible. That was then blended in kettle with a second mash of 9 malts and a large proportion of cacao and boiled further. A whirlpool addition a lactose added even more body and residual sweetness. The already cakey and unctuous beer was then cold steeped with Tonka beans, hand processed vanilla pods and a huge amount of Willie’s cacao nibs resulting in something very special indeed to celebrate our 7th birthday.
